Lactose Intolerant

Kainoa may be lactose intolerant.  We are on the second round of no dairy to see if she really is or not.  With the bloated stomach, stomach pains, gassiness to wazoo, and frequent bathroom trips...this may be the answer.  It's sad to see her stomach puffed out and hard.  I'm hoping she isn't LI because it will be hard for her not to be able to eat cookies, cakes, and brownies...and there is no way I am making this lactose free macaroni and cheese, even if mac and cheese is Kainoa's favorite thing to eat:

8 oz. elbow or bowtie pasta
¼ cup flour
2/3 cup nutritional yeast
½ t . powdered garlic
1 t .sea salt, plus more for seasoning
4 T. plus 1 t. olive oil
½ cup finely chopped yellow onion
1 3/4 cups unsweetened soymilk
1/3 cup finely ground cashews
3 T. tahini paste
½ cup fresh bread crumbs, made from day-old bread
¼ cup raw sunflower seeds or pumpkin seeds (optional)
Cayenne pepper or black pepper, to taste

Nutritional yeast is a type of yeast you can get at health food stores. It is one of the only non-meat sources of vitamin B-12 so my guess is this is meant for a vegetarian who does not eat lactose containing products.
Also, they do have lactaid/generics at the store that provide the enzyme lactase if you would like her to have the original (and much better) version of mac and cheese.
Hope you don't mind my nerdiness, food is my job. :)

Poor Kainoa....I wonder why it is just now affecting her. Hopefully she can grow out of it. Not fair to miss out on cake, cookies and all the other sweet goodies.
